If you want to eat something that is both scrumptious and healthy, you should definitely try Mexican chevice. Mexican chevice is a dish based on fish and a lot of different fishes are used throughout Mexico, depending on what the fishermen have caught on that particular day. Start by finely choping 2-3 ripe tomatoes and 1-2 medium purple onions. Mix the fish with the onions and leave to chill for 2 hours. Squeeze the juice out of 5 limes and 5 lemons. (This will go faster if you have a juicer.) Add the juice to the fish and the onions, together with 1 sprig of fresh cilantro and 4 ounces of Tequila. Season the fish with salt and black pepper to taste and leave to chill over night. As you can see, you do not need an oven to make this dish and it can be prepared well in advance. If you have a party coming up, simply multiply the ingredients and make a huge batch of yummy Mexican chevice for your guests to enjoy.
